Ingredients

  • 4 Halenda's Pork loin chops, 3/4-inch thick, trimmed
  • 2 tsp (10 mL) olive oil, divided
  • 1/2 each: red and green peppers, sliced
  • 1 medium onion, sliced
  • 1- 8 oz (213 mL) can pizza or tomato sauce
  • 1/4 cup (50 mL) white wine
  • 1 tsp (5 mL) dried Italian herbs
  • 1 cup (250 mL) shredded part-skim mozzarella

Serves 4

Directions

  1. In a small saucepan, heat 1 tsp (5 mL) oil over medium-high heat.
  2. Sauté peppers and onion until softened; add pizza or tomato sauce, wine, and Italian herbs.
    Simmer for 5 minutes.
  3. Heat remaining oil in a large skillet over medium-high heat; cook Pork chops for about one minute on each side to brown. Add peppers, onion, sauce mixture and simmer gently for 20 minutes.
  4. At serving time, transfer to an oven-proof serving dish and sprinkle with mozzarella.
    Place under broiler and broil until cheese begins to bubble and brown
